Huevos Rancheros Recipe

Today I awoke craving a nice hearty brunch. I looked around my kitchen to see what I could make and decided that huevos rancheros would be perfect!
Here's my easy-to-make version of a popular Mexican breakfast dish.
What you'll need: Eggs, corn tortillas, one large tomato, one medium sized onion, salsa, hot sauce (I'm using Valentina because it's great),
cheese (you can use shredded or queso fresco), pickled or fresh jalapenos, avocado and beans.
Toss the chopped up tomato and onion in a greased pan.
While it's sautéing, chop up a little bit of jalapeno and toss it in the pan.
While that cooks, cut your avocado.
Once it's all lightly browned pour in your salsa and hot sauce. Depending on how chunky you like it add more or less salsa.
If you like it spicier and not as chunky add more hot sauce.
While that thickens, start heating your tortillas. You can just heat them so they stay soft or let them get crispy. (I like my tortillas with a slight crunch)
I'm heating up left over beans from yesterday but you can use canned black beans or canned refried beans.
As for the eggs, make them sunny-side up. Don't over cook them! The yolk should be somewhat runny.
Spread the beans on the tortilla along with the salsa.
Place the eggs on top of the beans and salsa sauce. Put as much cheese and avocado as you want and enjoy!

Brunch at Alor Cafe

Alor Cafe is probably three in my top 5 brunch spots.
They have a decent herbal tea selection and make a great ice coffee. (not pictured) I ordered the African red tea which was really, really good.
Veggie omelet and mixed green salad.
Eggs, spanish sausage, onions, and potatoes.
The veggie omelet was around 7 bucks, the eggs skillet was around 8 bucks and the crepe was 9.
Nutella, bananas, strawberries, and dulce de leche crepes. D-E-L-I-S-H.
Oh and not only is the food good, the decor is cool as well. Look at that freaking table, it's glass with coffee beans and dried flowers. I want to own that table.

P-I-Z-Z-A

Last night my friend Gabriella and I made pizza!

Trader Joe's is my favorite. This whole wheat dough is so good!
Gabriella kneaded the dough.

And chopped the veggies.
While I took pictures and spread the wonderful genova pesto
Layers and layers of 3 different cheeses, cherry tomatoes, roasted red peppers, and honey goat cheese.
I thought I would have leftovers but we accidentally the whole pizza.

Christmas with the Rainones

For the past eight years, I've spent Christmas day with my best friend, her cats, and her family.

Prime rib, cheesy potatoes, salad.

Colombian Christmas

Yesterday my abuelita spent most of the morning preparing the tamales we ate on Christmas Eve.

The tamales have chicken, beef, pork, yellow corn meal masa, peas, carrots, potato, and guiso!

They are cooked slowly in boiling water and served with rice, maduros, and tostones.

Feliz Navidad!

Food Marathon 2k12

One of my good friends and I share a passion for food. We don't eat to live, we live to eat. Yesterday we started our food marathon (greatly coined by this puta previously mentioned) in this great cafe in Park Slope called Four & Twenty Blackbirds.

We specifically went there to eat the salted caramel apple pie. But I looked at the menu and I ended up ordering a slice of sweet potato apple crumble. Which was a great choice! It literally was a 10 out of 10. It wasn't too sweet, the crust was thick and flakey..It was just heavenly.

Paula ended up getting the salted caramel apple pie which was delicious.

If you end up going there make sure to say yes when they ask if you want whip cream! It's really good!
Its creamy as all fux and surprisingly not sweet as all. It's actually slightly refreshing. It's perfect for dipping a fork full a pie in.

After devouring our pies, we just hung out there for a bit drinking coffee, talking about my medical anthropology paper, and looking up the vendors at Brooklyn Bazaar Night.Which we ended up going to later that night and sharing a salted caramel ice cream cone. It was so good I didn't even take a picture of it!

After Four and Twenty Blackbirds we headed to The Meatball Shop in Williamsburg.

I order a glass of one of my favorite beers: Sixpoint Bengali Tiger IPA for only $3!
As for the meat balls..FUCK. I can't even explain how good those meat balls were. My taste buds were literally climaxing bite after bite.
I ordered it with pesto and a side of mashed potatoes. Not only was the food incredible, it was pretty cheap! Twelve bucks for my plate.
